As for whites, the Tierra de Cádiz DO produces fresh, fruity and aromatic wines, mainly using the Palomino Fino, Moscatel de Alejandría, Pedro Ximénez and Chardonnay grape varieties. White wines are also made from local grapes such as Mantúa, Perruno and Vijiriego.
