Mar de Frades is a single-varietal Albariño white wine made in the DO Rías Baixas by the winery of the same name, Mar de Frades.
The grape used to make this Albariño comes from Finca Valiñas, a vineyard planted on terraces and located south of Mount Valiñas, in the Salnés Valley. You can notice the influence of the nearby Ría de Arousa, and its sea breezes that give this Sea of Frades a saline character. They are vines that are more than 20 years old, trellised to avoid soil humidity. A poor and shallow soil, formed by granite decomposition sands that transmit a certain minerality to the wine.
The harvest is carried out manually and the grapes go through a strict table selection process, where up to 20-25% of the harvest can be discarded. The grapes macerate between 10 and 20 hours and after light pressing, a clean and very aromatic must is obtained. Fermentation is carried out slowly at a controlled temperature.
