La Casa de las Locas Albariño is a single-varietal white wine made entirely from Albariño grapes, sourced from the Salnés Valley subzone within the Rías Baixas DO (Galicia, Spain). This area, influenced by the Atlantic and characterized by its granitic soil, provides an ideal environment for the grapes to develop freshness and minerality. The project is part of Territorio Cepas, an initiative by Bodegas Siete Pasos that seeks to capture the authenticity and joy of camaraderie in every bottle.
The harvest is done by hand in the early hours of the day to preserve the freshness of the grapes. In the winery, fermentation takes place at a controlled temperature in stainless steel tanks, followed by three months of aging on its fine lees and partial malolactic fermentation, which enhances its aromas and body without losing its natural vibrancy.
