It offers an intense and complex aromatic palette: notes of lime, mandarin peel and green apple intertwine with stone fruits such as apricot and white peach. Delicate floral nuances (jasmine, orange blossom) and a marked mineral background are also perceived. In this vintage, a subtle touch of honey and beeswax appears, possibly derived from a small proportion of noble botrytis, providing depth without losing freshness.

Sourced from old vines on the stony, well-drained slopes of the Waipara Valley in North Canterbury, this magnum version allows you to further appreciate the aging potential and evolution of this Riesling, handcrafted by the Donaldson family, pioneers of winemaking in the region.
The 2021 vintage was marked by ideal weather conditions, with slow and progressive ripening that allowed for the harvesting of grapes with excellent concentration, natural acidity, and a vibrant aromatic profile. Many of the vines used for this wine are over 30 years old, allowing for a more complex and profound expression of the variety.
Pegasus Bay crafts this Riesling with a philosophy centered on minimal intervention and utmost respect for the vineyard. Fermentation takes place slowly at low temperatures to preserve the purity of the aromas and is stopped naturally to retain a small level of residual sugar that balances the intense acidity characteristic of the region. In some years, such as 2021, a portion of the grapes may have been affected by noble botrytis, adding greater complexity without compromising freshness.
