Cabernet Sauvignon is a structured, dry red wine, renowned worldwide for its dark fruit aromas, pronounced tannins, and exceptional aging potential in oak. Aromatic profile: Intense notes of blackcurrant (blackcurrant), ripe cherries, green pepper, tobacco, and cedar.
Palate: Full-bodied, with high acidity and a strong tannic presence that gives it longevity.
Botanical origin: It originated in Bordeaux, France, as a natural cross between the Cabernet Franc and Sauvignon Blanc varieties.
- Styles by Region:
- Bordeaux (France): A classic, restrained, and balanced profile, generally blended with Merlot to soften its power.
- Napa Valley (USA): Opulent, ripe wines characterized by a high concentration of sweet fruit and new oak.
- South America (Chile and Argentina): Intense and highly aromatic versions that stand out for their excellent value for money.
Cabernet Sauvignon contains an organic compound called pyrazine. When the grape is grown in cool climates or harvested slightly before optimal ripeness, this compound imparts a very distinctive aroma of green pepper, mint leaves, or eucalyptus. In warmer climates, this herbal touch recedes, giving way to dark fruit preserves and notes of dark chocolate.
