I.G.P. Cádiz
The I.G.P. Cádiz (Vino de la Tierra de Cádiz) covers wines made in the province of Cádiz, in Andalucía. It shares its territory with the Marco de Jerez, with vineyards on albariza soils and a clear Atlantic influence.
Palomino is one of the fundamental varieties of Cádiz viticulture. Although it is world-famous for its use in the wines of Jerez, it also makes still white wines, which are particularly interesting when they come from certain vineyards and soils.
They can show fresh, dry profiles, with white fruit, herbs, mineral notes and saline sensations.
Among the red grapes, Tintilla de Rota stands out in particular, a historic variety closely linked to Cádiz.
It can produce wines of deep colour, good structure and acidity, with aromas of black fruit, plum, violets, spices and Mediterranean herbs.
The recovery of old vineyards and growing interest in this variety have helped bring it back into the spotlight.
The I.G.P. allows a wide range of varieties. In addition to the traditional ones, we find grapes such as Tempranillo, Syrah, Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot among the reds, as well as various white varieties.
This flexibility explains the considerable diversity of styles found under the indication.
Unlike Jerez-Xérès-Sherry, here we mainly find still wines.
Fresh Atlantic whites, rosés and reds are produced, ranging from fruity, young styles to structured, oak-aged wines.
Some producers especially seek to convey in their wines the influence of the Atlantic, the albariza soils and Cádiz's historic varieties.
