Its color is dark cherry red with a ruby-purple rim. Appearance

High layer wine. Dark cherry red color, with a ruby-purple rim. Generous tears and clean appearance.

Nose

Complete wine in aromas, with a complex and elegant profile. Its nose is an intricate set of aromas, which harmonize perfectly. We can find fruity notes such as blackberry, black currant or raspberry. It also shows spicy and nutty nuances, ending with sweet notes, such as vanilla, toffee and coffee with milk, on a subtle mineral background.

Palate

Powerful attack. Voluminous in the mouth, silky and velvety. The excellent balance between its acidity and tannicity gives it a structured and polished sensation. As on the nose, it is exuberant on the palate. Recalling the aromas of red and black fruits, enveloping the palate in spicy, toasted and roasted nuances, which last over time.

Serving temperature

14 - 16ºC.

Description

It remains in French oak barrels for 16-18 months.

Production in a truncated cone-shaped concrete tank. Pre-maceration at 3-4ºC for 24 hours in a cold chamber. Alcoholic fermentation in concrete tanks, with maceration periods of around 18 days. Pumping over twice a day and three deléstages during alcoholic fermentation.

It remains in the barrel for a period of approximately 16-18 months, depending on the evolution of the wine, undergoing malolactic fermentation in the barrel and using first, second and third year French oak barrels from Alliers, using volumes of 225 liters and 300 liters.

Optimal consumption until approximately 2030 if kept in good conditions.
