The Verdejo grape is a white grape variety originating from Spain, considered the undisputed queen of the Rueda Designation of Origin (D.O.), located mainly in Castilla y León. It is famous for producing young white wines that are highly aromatic, fresh, and with a characteristic bitter finish.

  • Aromatic profile: It stands out for its intense notes of white fruits (such as pear and apple), citrus, freshly cut grass, fennel, and subtle tropical touches.
  • Palate: It is a wine with good acidity, medium body, and a very elegant and characteristic bitter aftertaste that cleanses the palate.
  • Evolution: Although most is consumed as a young wine, it responds excellently to lees aging and barrel aging, gaining unctuousness and complexity.

Tasting notes: It stands out for its high aromatic intensity with nuances of white fruit, citrus, and a characteristic herbal or vegetal background (such as fennel) and a slightly bitter finish.

Young wine: The most common and fresh style, fermented in stainless steel, ideal for drinking well chilled.

Lees aging: Wines with greater volume, density, and complexity thanks to contact with the yeast.

Barrel aging: More complex versions, with toasted notes and great aging potential.

Grape and Vine Characteristics
  • Clusters and berries: It features small and compact clusters with medium or small grapes, thick skin, and a greenish or yellowish hue when ripe.
  • Resistance: It is a medium-vigor vine, highly resistant to drought, that adapts excellently to poor, stony soils and continental climates.
  • Night harvesting: It is usually harvested at night to protect the grapes from the September heat, reducing oxidation and better preserving their aromas.
Ideal pairing
  • Fish and seafood: Ideal with grilled white fish, ceviches, and cooked seafood.
  • Rice dishes: Combines perfectly with seafood paella or mild risottos.
  • Cheeses and appetizers: Excellent with goat cheese, fresh cheeses, and Mediterranean tapas.
